知っておきたいこと
- ナスが腐ると、色がくすんでしわしわになります。柔らかくぶよぶよになり、腐ったにおいがすることもあります。
- 新鮮なナスは、常温で2、3日間、冷蔵庫で5日間、冷凍庫で8~12か月間保存できます。
- 切った後茶色に変色したナスを食べても問題ありません。変色の原因は酸化です。

- 光沢がなくなり、しわしわになる 安全に食べられる熟したナスは、実が引き締まって皮がつるつるしています。光沢が失われたり、しわしわになったりしているナスは、食用に適した時期を過ぎており、料理に使えません。[1]
