How to Preserve Meat

Meat can be stored safely for weeks, months, or even years if preserved properly. Keeping meat cold in a freezer is the most obvious method. However, there are other ways to preserve meat -- some of which have been used for 1,000 years or more. This is very important such as a time of emergency.

Preserving by Freezing

    • Place pieces of meat in air-tight storage jars (or plastic storage bags), making sure to fully cover the meat with salt. Alternate layers of meat and salt to ensure all parts of the meat are covered in salt.[11]
    • Keep the jars/bags in a cool place (36-40 degrees Fahrenheit) for a month. Do not allow to freeze.[12]
    • Determine how long to salt cure meat using this formula: 7 days per inch of thickness. For example, a 12-14 pound ham which is 5 inches thick will need to cure for 35 days.[13]
    • Salt cured meat can last 3-4 months without refrigeration if kept in air-tight packaging such as plastic bags.
    • You will want to rinse the excess salt off the meat before cooking.[14]

Preserving by Drying (Dehydrating)

    • Boil strips of meat on the stove for 3-5 minutes to get rid of bacteria.

    • Smoked meats can last 1-2 months in air-tight containers.

Preserving by Canning

    You can not can foods in a water bath if they don't contain some sort of acid. Pressure canning is required for things like mincemeat, cooked chicken, etc.

    Yes. You can can pretty much any type of food, raw or cooked. But for foods with little to no acid, you can't use a water bath, but must use a pressure canner.
