死掉的蓝蟹拿来烹饪,蟹肉就会变得软塌塌的。而且,细菌会在死螃蟹体内大量繁衍,因此你可能会把有害菌吃进肚子里。[1] 要想在烹饪之前让蓝蟹保持鲜活,就得把它们养在凉爽湿润而且没有压力的环境里。比如说,把蓝蟹放在冷藏箱里,或者放在垫有冰袋的大篮子里,然后再套上湿麻袋。如果是在家附近水域捕获的蓝蟹,你也可以把它养在水域内的水产网箱里。但千万记住,不能把蓝蟹放进冰箱内或者养在死水里。
步骤
- 买一个20升的普通水桶。在桶壁和桶底打几个孔。确保孔的大小既能让水流动,又能防止蓝蟹逃出去。[8]
- 或者,买一个专门用来存放活蓝蟹而设计的木箱。
- 要是你住在捕获蓝蟹的水域附近,这种方法就非常奏效。要是你没在附近住,还是用冷藏箱的办法比较好。
- 桶口罩上网罩。你在当地的五金店就能买到金属丝网。把金属丝网按照桶口大小弯折网边,然后箍住桶边,打钉固定就成了网罩。[9]
- 购买金属丝网时,要确保金属丝网要比桶口多出3厘米。
- 用重型打钉枪把金属丝网牢牢地钉在桶边,用它罩住桶口。
- 每天喂蓝蟹一两次。蓝蟹要是养在水里,就得喂食。成年蓝蟹吃牡蛎、文蛤、死鱼或活鱼、螃蟹(也包括蓝蟹)、虾、有机残渣、水生植物,也吃海莴苣的叶和芽、大叶藻、盐沼草以及沟草。[10]
- 让蓝蟹保持凉爽。要让蓝蟹保持凉爽,可以把它放在冷藏箱或大篮子里。10度是最理想的温度。低于10度,蓝蟹就会被冻死。[11]
- 要想让蓝蟹保持鲜活,千万不能把它们放进冰箱。因为冰箱里的温度太低,蓝蟹会被冻死。
- 烹饪之前让蓝蟹恢复到室温。低温状态下的蓝蟹会处于休眠状态,看上去就像死了一样。等到烹饪之前,你得让蓝蟹恢复到室温。蓝蟹一旦恢复到室温,就会活跃起来。这是判断蓝蟹死活的好办法。[12]
- 绝不要烹煮死蟹。
