    You really don't want to depend on any protein being cooked properly (for both safety and taste), by anything other than the temperature of the meat being between 145-160ºF. A good digital meat thermometer is pretty inexpensive and one of the most important tools to have in your kitchen! This makes it so much easier to determine the meat is cooked to a safe temperature, and to avoid over-cooking.
