Knowing how to cut your own spare ribs is a good skill to have for many styles of cooking such as barbeque and some Asian cuisines. Not to mention, cutting your own ribs saves money, as pre-cut ribs bought at grocery stores tend to be more expensive. For pork, this cut of meat is simply called spare ribs. For beef, the spare rib equivalent is called short ribs.

    • The skirt is a flap of meat located on the back of the rack in the middle.

    • The sternum, otherwise known as the breastbone, is attached to the rib cage at the wider end.

    You will find this flap of meat at the narrow end of the rib cage attached to the last bone on the back of the rack. The back is the side where more bone is exposed.

    St. Louis ribs are rectangular. They're basically spare ribs that have been trimmed off. The diaphragm is removed from the inner part and you're just left with a rectangular spare rib.
