生菜的保鲜期比大多数蔬菜都短,而娇嫩的奶油生菜尤其不耐放。生菜最适合存放在潮湿、低温,空气流通不畅的环境中。冰箱冷藏室中的保鲜格就是根据这个原理设计的。下文将教你如何让生菜的保鲜期延长至一周甚至更长。
步骤
- 把脆生菜放入冰箱的蔬果保鲜格。蔬果保鲜格是冷藏室中温度最低的一块区域。大多数超市购买的生菜可以在保鲜格里保存3到7天。具体保存天数是由购买时生菜的新鲜程度决定的。球形生菜有时可以存放两周之久。[8] 自家菜园里种植的,或者直接来自农场的新鲜生菜可以保持更长的时间。
- 不要将生菜和其它食物塞到一起。如果储存空间太狭小,生菜叶子会出现伤痕。
- 不要把生菜和苹果、梨、西红柿,以及其它能够释放大量乙烯气体的水果放在一个格子里,这样会加快生菜腐烂的速度。
- 观察容器。如果有水从容器边流下来,说明你得把冰箱的湿度调低些,或者将果蔬保鲜格上的通气口开大点。另外,多余的水也最好排掉。如果保鲜格里或者生菜的叶子上出现冰晶,那就说明冰箱温度太低,需要调高一点。广告
- 朝自己吃的生菜里呼气。二氧化碳能够延缓生菜的枯萎,延长散装生菜叶的保质期。二氧化碳很容易注入,只要朝保鲜袋里吐一小口气,然后将袋口封起来就行了。[9] 出于卫生考虑,这种方法只适合于你自己要吃的生菜。
- 如果生菜的菜心完好无缺,即使注入二氧化碳也无法延长其保鲜期。
- 使用浓度更高的二氧化碳。在最好的情况下,这个妙招能将生菜的保质期延长5天。具体操作方法如下:[10]
- 在香料瓶或其它小容器里倒入1茶匙白醋,放入冰箱冷冻。
- 在冻好的白醋里加入1茶匙小苏打。
- 把玻璃瓶的盖子摘掉,开口处盖上几张厨房纸巾。用橡皮筋把纸巾套在瓶口。
- 将玻璃瓶竖着放进装有生菜的密封保鲜盒。白醋会慢慢融化,然后和小苏打发生反应,释放出二氧化碳。
- 如用玻璃罐储存脆生菜,抽去玻璃罐里的空气。如果你有真空包装机和一罐球形生菜,抽去罐子里的空气能够将生菜的保质期延长两个星期。[11] 真空处理过的罗马生菜通常可以存放一周。这个方法不适合奶油生菜或者其它叶片比较娇嫩的生菜。[12]广告
