What kind of rag should I use?

I use a new cotton kitchen towel. Square is best. Bring the four corners together and tie them with cooking twine. Don't wrap the towel too tight - you want the pastry to expand like a dumpling.

Yes, otherwise it'll just burn in the bottom when the liquid has completely evaporated.

      Tips

      • A hot damp cloth is best used to wrap the pudding. Make sure excess water is removed from the cloth by wringing. Flour can be sprinkled on the damp cloth before the pudding is wrapped.
