Middle Eastern hummus is usually made with chickpeas. This version of hummus was redesigned in the USA and is a bit different. It has a milder flavor. The ingredients are similar, but with a twist of two... or three...

  3. How.com.vn English: Step 3 Add 2 tablespoons of unroasted Tahini (sesame seed butter).
  4. How.com.vn English: Step 4 Add 3 teaspoons of soy sauce.
  5. How.com.vn English: Step 5 Add 3 tablespoons of fresh lemon juice.
  6. How.com.vn English: Step 6 Add 2-3 cloves of chopped or pressed garlic, according to your taste.
  7. How.com.vn English: Step 7 Add a pinch of cayenne according to taste.
(Don't add too much, though. Cayenne is very strong.)
  8. How.com.vn English: Step 8 Start the food processor and run it for 2 minutes or until the mixture is very smooth.
  9. How.com.vn English: Step 9 Taste and adjust the flavor by adding lemon juice and/or soy sauce.
When you master those two you can adjust the tahini. It takes 5 to 6 tries to get it right, and you may spoil the lot on the first try if you make large adjustments.
  10. Step 10 Serve with bread, crackers, or in wraps, and enjoy a unique flavor of hummus with a flavor penchant on "Pâté de Foie Gras".

      Warnings

      • Do not use too much tahini or soy sauce as they can ruin the flavor very quickly past a sensitive limit. The secret of fine hummus is in how well you learn to control those two ingredients. Too much soy will discolor the hummus on the dark side. Too much tahini will lighten up the hummus. Too much of both will appear right, but the flavor will be too strong.
