- Heat oil in skillet to 350 °F (177 °C).
- Add Panko crumbs to a large plastic food storage bag. Shake well.
- Butterfly shrimp by cutting vertically down the back of the shrimp. Hold the shrimp firmly with one hand and slice halfway through the shrimp.
- Beat the eggs and water together until yolks are broken.[4]
- Dip the shrimp in the egg-water mixture.
- Add the shrimp to the Panko crumbs.
- Toss to coat.
- Remove shrimp from bag and dip again in egg-water mixture.
- Return to Panko crumbs in bag.
