How to Cook Spaghetti alla Carbonara

In Italy, spaghetti alla carbonara is considered one of the easiest, least expensive pasta dishes. A typical Italian kitchen has all of these ingredients on hand. In the States, you may have trouble finding the pancetta, but it's well worth the trouble.

      • To make your carbonara even more creamy you can add a little bit of cooking water, so you will not need to add cream (the original recipe doesn’t have it!). Also it is better to immediately eat it: it must be hot.[1]
      • As an alternative to spaghetti you can also use rigatoni or mezze penne rigate and if you cannot find cheek lard you may use bacon or stretched pancetta, but in these cases add some oil in the pan.[2]
      • A heavy pot is needed to boil the pasta because the heat of the pot AND heat of the pasta is crucial to cooking the eggs and melting the cheese. Always use fresh grated Parmesan cheese - the canned stuff won't work. If you can, use freshly course ground black pepper, otherwise use a course ground jarred pepper. Use a strong spoon as the pasta mixture does get somewhat sticky as you're mixing in the eggs, cheese, and black pepper. A heavy wood spoon is better so that it won't scratch the pasta pot.
