Ingredients

  • 12 lb. (5.4 kg) of cabbage, red or white varieties (roughly 3 to 4 heads)
  • 8 cups (1.9 L) of red wine vinegar (5% acidity)
  • 1/2 cup (118 mL) canning salt
  • 1 cup (236 mL of brown sugar
  • 2 cinnamon sticks
  • 1/2 cup (118 ml) mustard seeds
  • 1/4 cup (59 ml) whole cloves
  • 1/4 cup (59 ml) mace
  • 1/4 cup (59 ml) whole allspice
  • 1/4 cup (59 ml) whole peppercorns
  • 1/4 cup (59 ml) celery seeds

Steps

    Select fresh, ripe cabbages that are free of blemishes, dents or bruises. Cut the cabbage into 4 quarters through the stem and shred it with a knife or food processor. Layer the cabbage with canning salt in a large bowl, cover and let stand for 24 hours.[1]

    • For weighted gauge canners set pressure to 10 PSI (68.95 kPa) for altitudes of 0 to 1000 feet (0 to 305 m), and 15 PSI (103.4 kPa) for altitudes above 1,000 feet (304.8 m).
