How to Can Asparagus Without a Pressure Canner

If you've gotten more fresh asparagus than you can eat right now, save it for later. Although asparagus can be safely preserved in a pressure canner, you can't safely preserve asparagus in a water bath. To can asparagus without a pressure canner, you must pickle the asparagus first. You'll need to combine a vinegar brine to pour over fresh asparagus in your canning jars. Then you can easily boil the jars to create secure seals. Store your pickled asparagus in a clean and dry place. For the best flavor, try to use the pickled asparagus within a year.

Not sure how much time exactly it will take for the "pickle" taste to be acquired, but not more than a month. After two weeks or so it should be good to eat, but take a month if you're worried.

    Because the water bath draws out oxygen in the jar (which will cause bacteria to thrive), and as it pulls the oxygen out, it makes a vacuum that seals the lid.
